2 tbl cooked bacon finely diced (cooked medium so that the bacon is still tender)

The name Smoked Oysters "Picado" stems from the Spanish word, to finely mince or chop. Folks, it's not rocket science to pull off this extremely tasty party trick. The most beautiful things in life are often very simple to experience and produce.
Using a fork, chop and mash smoked oysters and with a sharp knife, finely chop bacon and scallions. Mix with other ingredients and stuff back into oyster tin for a quirky presentation. Serve with thinly sliced and toasted baguette (but crackers will also do).Bon appetit!
